Stuffed Zucchini— محشي كوسة (An Egyptian Dish)

Notes

Use young green zucchini since it is softer than larger ones. (You can also use Green Peppers, White Aubergine/ White Eggplants, Tomatoes and/or Cabbage)

Preparation Time

1.5 hours

Ingredients

1 kg zucchini, small size

3 tablespoons tomato past.

Salt.

Pepper.

1 tablespoon margarine.

1/4 kg minced meat.

2 cups rice.

1 onions, finely chopped.

1 cup parsley ,finely chopped.

1 teaspoon mint ,dried and ground.

1/2 kg tomato.

2 tablespoons margarine.

salt & pepper & spices.

Cooking Instructions

Preparing the stuffing

In a bowl mix minced meat, salt, pepper and tomato chopped in small pieces. 

Wash rice well, drain and add to bowl. Stir to mix all ingredients well. 

Also add parsley, spices and margarine.

Preparing and Stuffing zucchinis

Wash zucchinis and cut their tops. 

Remove the insides of zucchini. 

Put 1-2 tablespoons of stuffing, don’t fill the whole zucchini with stuffing to give space for rice to expand during cooking. 

In a large pan arrange stuffed zucchinis in a standing position with their tops facing upwards. 

Dissolve tomato paste and salt in 2 cups warm water and add to zucchinis in the pan. 

Cover the pan and cook over medium heat until rice and zucchini are done. You can add boiling water if needed. 

Arrange stuffed zucchinis in a serving platter. 

Serve hot.

Kunafa (An Egyptian Dessert)

Kunafa ( An Egyptian Dessert)

Kunafa is an Arabic dish.  The story of Kunafa begins when:”it was introduced by a physician who saw how some princes had a hard time fasting because of their appetite. He created the dish and instructed the princes to eat a great amount of it just before dawn, and as a result they were never hungry during the day” (Al-Ahram, 2004). Kunafa is a sweet dessert made from spun shredded wheat and topped with raisins, nuts, and cream. In different variations of this dish, the cream is replaced by mozzarella or by cream cheese and at times cinnamon is added. The exact ingredients differ depending on which Arabic region it comes from. This particular Kunafa contains nuts and is from Egypt.

 Ingredients

For the dough:

  • 1 lb of shredded Phyllo Dough; thin sheets of unleavened flour dough.
  • ½ lb of butter
  • 2 teaspoons of oil
  • 2 cups of any chopped mixed nuts

For the syrup:

  • 1 ½ cup of sugar
  • 1 cup of water
  • ½ of a lemon

Steps

  1. To make the syrup: Put 1 ½ cup of water in a deep pan
  2. Add ½ of a squeezed lemon
  3. 1 ½ cup of sugar
  4. Put the liquid on the stove; on medium heat
  5. Stir for 10 minutes
  6. Let it simmer until thickened
  7. To Make the Dough: Preheat oven to 350 degrees
  8. Put the Kunafa Dough in a mixing bowl
  9. Melt the butter in the microwave, then pour it on the dough. Mix the butter and the dough well until it is all absorbed.
  10. Take a baking pan and add a few oil drops on the bottom so the dough does not stick to the bottom of the pan.
  11. Take half the dough that you mixed the butter with and place it in pan.
  12. Using both hands, pat down the dough well until you can’t see the bottom of the pan. Place mixed nuts on top of the Kunafa dough; cheese can also be added.
  13. Cover the nuts with the other half of the dough.
  14. Pat down very well.
  15. Place into oven for 25 to 30 minutes until the Kunafa becomes a golden color.
  16. Remove the Kunafa from the oven and pour the syrup on top of it evenly
  17. Set aside for 10 minutes to cool
  18. Serve it warm.
